Rotisserie
The brilliant design of the La Cornue rotisserie makes it one of the most coveted tools for simple but spectacular roasting. The heat is generated by a burner at the base of the unit that travels up the channels in the cast iron plate and is held in place by the synthetic wicks. These wicks never discolor or require cleaning. Since the flames never come into contact with the meat, the meat is actually cooked by the indirect heat reflected from the cast iron plate, allowing it to retain all its natural moisture while developing a crisp crust.
There are three rack positions for the rotisserie: the top and bottom spits can be used at the same time or the middle one on its own. A fish basket accessory is also available.
